Conca Del Grillo

The grapes of this red wine come from 3 vineyards, differentiated by age (10, 20 and 30 years old), located in Monforte d’Alba. Before harvesting by hand, pruning of the grapevines takes place in the summer, reducing the weight of grapes to 1.2 kg per vine, thus achieving an optimal balance during the ripening phases in autumn.

After hand-picking, the grapes are crushed, filled into regenerated barriques and fermented for 11 weeks. This step is essential for the development process of the Barbera. It remains in the barriques for 12 months with weekly batonnages until late spring and concludes its evolution in the bottle for a few months.
