Amarone della Valpolicella
The Amarone is an iconic wine from Valpolicella, made of a meticulous grape selection. Choosing the right time to harvest, when the grapes are fully mature, is one of the most critical factors in determining the success of the vintage. After the harvest, the grapes are placed in a room specially built to dry them under natural conditions to make them lose 30-35 % of their water content. Resulting in grapes that are more concentrated in flavour and are finally used for the vinification process. The Fermentation take place at controlled temperature into steel tank for 3 weeks, after the wine is ranked into new 500-litre Tonneux of medium charred French oak with a weekly batonnages. Depending on each vintage, Luca Anselmi decides how long the wine should age in the bottle.
