The Roero Riserva fulfils the highest expectations: In the glass, it shines in an intense straw yellow, while the nose is spoilt with aromas of citrus fruits, white pepper, herbs and a delicate hint of dried apricots. On the palate it shows a vibrant acidity and rich mineral notes. All in one its a elegant, full-bodied, and deeply layered wine, that pairs well with fish dishes.
Roero Riserva
The Roero Riserva, crafted from 100% Nebbiolo, originates from a historic vineyard of the estate, planted in 1981. These old vines naturally yield only a small quantity of fruit – between 1.5 and 2.5 kilograms per plant. In August, an additional meticulous selection takes place directly on the vine, removing any green or imperfect berries. The result is a strict yield of around 1 kilogram per plant, enhancing both concentration and finesse.
With a final yield of just 60 quintals per hectare, this Roero Riserva remains well below the permitted limit of 80 quintals – a testament to the uncompromising selection of only the finest grapes. Harvest takes place in October, exclusively by hand, with the fruit placed in 20-kilogram crates to preserve its integrity.
In the cellar, the grapes are gently destemmed and fermented with selected yeasts. The must undergoes fermentation for about 30 days, accompanied by daily remontage to fully extract valuable polyphenols and anthocyanins. This is followed by malolactic fermentation in stainless steel before the wine matures for 36 months in large Slavonian oak casks.
After its time in wood, the Roero Riserva rests for a further two years in bottle – a long period that bestows elegance, depth, and a complex aromatic profile, before it is finally presented to the wine enthusiast.
